Food Service Planning and Design Consultant Resources

A few of the consultants working with Kaizen Foodservice Design Inc.

David Purcell

David has been in the food service industry for over 15 years primarily in an operational and management role. Most recently Davd has managed the food service operations for Terminal 1 at Pearson International Airport on behalf of SSP International, Creative Host Inc. Past experience has included management positions with Murphy’s Law Irish Pub, Club Restaurants of Skydome and Great Moments in Catering Inc.. David is a fully certified W.H.M.I.S. Trainer, WSIB Joint Health and Safety Certified Officer – Level 2 and has extensive experience with multiple point of sales and food service software systems.

Melissa Schaven

Melissa recently joined our firm after successfully completing her Bachelor of Interior Design at Sheraton College. Melissa provides our team with technical and AutoCAD support as well as coordination of interior elements relating to food service design initiatives.

Judith Hill

Judith hold a Bachelor of Science Degree in Dietetics from Ottawa University and a certified diabetes educator designation and is fluent in both English and French. She brings to our team twenty one years experience as Director of Dietetics-Diabetes Education, Pembroke Regional Hospital, Pembroke, Ontario and an additional four years experience as Assistant Director of Therapeutics, Lecturer at a University, Special Education Teacher’s Assistant and Clinical/Therapeutic Dietitian. Most recently Judith has successfully implemented a spoken menu and on unit meal assembly system for the Pembroke General Hospital.

Fran Haley

Fran is an accomplished healthcare professional with extensive operational experience in complex settings, most notably University Health Network which operates Toronto General, Toronto Western and Princess Margaret Hospitals. Fran is a Certified Health Executive (CHE), a Registered Dietician and has a Bachelors of Science (B.Sc.) from St. Francis Xavier University and Masters of Health Service Administration (M.H.S.A) from Dalhousie University.

Chris Troiano

Chris Troiano brings to his clients over 20 years of strategic, systems and facility planning experience. Chris possesses a Bachelor’s of Science in Health Services Administration from Providence College, Providence, Rhode Island and a Masters of Business Administration in Management from Bryant College, Smithfield, Rhode Island. Areas of specialty include material management, surgical logistics, environmental services, pharmacy, SPD and biomedical and solid Waste management planning and design.

Matt Mundok

Matt is a 17-year veteran of the on-site foodservice industry, and is a Principal and Co-Founder of Innovative Hospitality Solutions. Matt is an active member of the Society for Foodservice Management (SFM) and holds a bachelor’s degree in hotel, restaurant and institutional management from Penn State University. He also has achieved the designation of Foodservice Management Professional through the National Restaurant Association. Prior to consulting, Matt was First Vice President and Assistant Director of MBNA’s Dining & Hospitality Services department and before joining MBNA, Matt spent six years with Wood Dining Services and three years with Marriott Management Services.

Gary Gunderson

Gary is a 29-year veteran of the on-site foodservice industry, and is a Principal and Co-Founder of Innovative Hospitality Solutions. Gary is an active member and Past President of the Society for Foodservice Management (SFM). In 1994, he received SFM’s “Lifetime Achievement” award, and in 2004, he received IFMA’s Silver Plate Award in the Business & Industry/Foodservice Management category. Gary holds a bachelor’s degree in business administration from the University of Phoenix and has achieved designation of Foodservice Management Professional through the National Restaurant Association
